There are times when only noodles will do, and this is the perfect recipe to satisfy that craving. Ready in minutes, the king prawns are cooked in a delicious garlic and chilli base which work perfectly alongside the soft comfort of the egg noodles, delicious for a light dinner or lunch.

Ingredients
- 1 knob of butter.
- 2 cloves of garlic.
- 3cm fresh ginger, grated (optional).
- 2 red chillies deseeded and finely chopped.
- ½ red pepper, sliced.
- ½ yellow pepper, sliced.
- 1 small carrot, grated.
- 250g peeled and deveined king prawns.
- 2 spring onions, chopped.
- 1 tbsp soy sauce.
- Juice of ½ a lime.
- 200g fresh egg noodles.
Garnish
- Spring onion, chopped. Slice or wedge of lime.
Method
1. Place the butter into your sauté pan. Add the garlic, ginger, chilli, peppers, and carrot and cook for a few minutes until it starts to soften. .
2. Add the prawns, soy sauce and the lime juice. Continue to cook for another 3-5 minutes until the prawns are pink and cooked through.
3. Add the egg noodles and spring onions, retaining some for garnish if needed. Cook until an even temperature. Serve immediately.
