Spicy Prawn Noodles

Ingredients

  • - 1 knob of butter.
  • - 2 cloves of garlic.
  • - 3cm fresh ginger, grated (optional).
  • - 2 red chillies deseeded and finely chopped.
  • - ½ red pepper, sliced.
  • - ½ yellow pepper, sliced.
  • - 1 small carrot, grated.
  • - 250g peeled and deveined king prawns.
  • - 2 spring onions, chopped.
  • - 1 tbsp soy sauce.
  • - Juice of ½ a lime.
  • - 200g fresh egg noodles.

 

Recipe Method

PREPARATION TIME: 30 mins

Place the butter into your sauté pan. Add the garlic, ginger, chilli, peppers, and carrot and cook for a few minutes until it starts to soften.

Add the prawns, soy sauce and the lime juice. Continue to cook for another 3-5 minutes until the prawns are pink and cooked through.

Add the egg noodles and spring onions, retaining some for garnish if needed. Cook until an even temperature. Serve immediately.

When ready to cook, add the peppers to your sauté pan and cook until they start to soften. Add the curry sauce and the cod fillets and bring up to a simmer.

Turn down to a medium/low heat and cover, cooking for a further 10 minutes or until the cod is cooked through.

Serve with a garnish of coriander leaves.

Serving Suggestion

Spring onion, chopped. Slice or wedge of lime.
