Italian Style Turkey Meatballs

Ingredients
- MEATBALLS
- - 500g 2% turkey mince
- - 1 red chilli deseeded and finely chopped.
- - 1 tsp dried thyme
- - 1 tsp onion powder
- - 1 tsp garlic powder
- - Seasoning to taste
- SAUCE
- - 1 onion finely chopped.
- - 2 cloves of garlic, crushed.
- - 1 red pepper, diced.
- - 1 yellow pepper diced.
- - 1 carrot, diced.
- - 1 stick of celery, diced.
- - 1 400g tin of chopped tomatoes.
- - 100ml vegetable or chicken stock.
- - 3 tbsp sun dried tomato paste or tomato puree.
- - 2 tsp dried oregano.
- - Seasoning to taste.
Recipe Method
To make the meatballs, place the turkey mince, with all remaining meatball ingredients into a bowl and combine well. You should not need anything to bind it, but if you feel it is not holding together, you can use a little beaten egg to help.
Form into your meatballs. Place onto a tray and pop into the fridge to chilli while you start on the sauce
To make the sauce, place a little olive oil into your sauté pan and pop onto a medium heat. Add the vegetables into your sauté pan and cook for 5 minutes to help soften.
Add the remaining ingredients and bring to a simmer, cooking gently for another 5-8 minutes until it has come together into a nice rich sauce. You can continue to the next step or leave to cook before placing in the fridge until you are ready to bring it all together.
When ready to cook, place the meat balls into your sauté pan. Cook on a medium heat until the meatballs are golden all over and cooked through. This should take approximately 10 minutes depending on their size.
Once the meatballs are cooked through, add the sauce. You may wish to add a little more stock if necessary and allow to simmer gently for another 5 minutes.
Serving Suggestion
Garnish with a sprinkle of feta cheese or garnish of chopped basil leaves. Serve with a green salad.

Turkey can be a little dry, but it is packed with protein without the additional fat. This recipe keeps the turkey moist and tasty whilst allowing more vegetables in a rich tomato casserole base. No need for pasta, just serve with a crumble of feta cheese and side salad. This recipe can be prepared in advance, bringing the sauce and meatballs together for a quick and easy dinner.
The meatballs can be frozen, ready to cook whenever needed. We suggest freezing the meatballs on a tray to avoid them sticking together. Once frozen, you can place them into a freezer bag. You can also freeze the finished meal if you prefer.
