Ingredients
- - 700 g lean ground beef (5–10% fat)
- - 1 tbsp olive oil (only if beef is very lean)
- - 1 medium onion, diced
- - 1 red bell pepper, diced (optional but family-friendly)
- - 3 cloves garlic, minced
- SPICES
- - 2 tsp chili powder
- - 1 tsp ground cumin
- - 1 tsp smoked paprika
- - ½–1 tsp cayenne (use ½ for medium, 1 for hot)
- - 1 tsp dried oregano
- - 1 tsp salt
- - ½ tsp black pepper
- SAUCE
- - 2 tbsp tomato paste
- - ½ cup beef stock or water
- - 1 tbsp lime juice (or lemon)
- SELF SERVE DISHES
- - 80 g shredded cheddar (about 1½ cups) or a mix of cheddar + mozzarella
- - 4 cups chopped lettuce (for serving)
- - 1 cup diced tomatoes (optional)
- - ½ cup plain Greek yogurt or pepperdew sour cream (optional)
Recipe Method
Sauté veg: Heat a large skillet over medium-high. Add oil (if using), then onion + bell pepper. Cook 4–5 minuntil softened. Add garlic 30 sec.
Brown beef:Add ground beef. Cook 6–8 min, breaking it up, until browned. Drain excess fat if needed.
Spice it: Stir in chilli powder, cumin, paprika, cayenne, oregano, salt, pepper. Cook 30–60 sec until fragrant.
Make it saucy:Add tomato paste and stir to coat. Pour in stock/water and simmer 2–3 min until thick and glossy.
Cheesy finish:Reduce heat to low. Sprinkle cheese over the top, cover 2 mins until melted.
Serving Suggestion
To make it leaner (still high-protein):
- Use 5% beef or swap half the beef for extra-lean minced beef or turkey, and use reduced-fat cheese.
(Assumes 700 g 90% lean beef, full cheese amount, and toppings kept minimal.) 610 kcals, 8.0g carbohydrates, 44g fat, 46g protein.
Serve:Spoon into bowls over lettuce. Top with tomato, and a dollop of Greek yogurt/sour cream with lime OR pepperdew cream.
